European AI alternatives to ChatGPT in 2026: French assistants and agents

In 2026, looking for a European AI is no longer just a political statement. It's usually a practical question: where does my data go? Which law applies? Is the tool even available where I live? Several big US agents aren't available in Europe: OpenAI's dots on personal plans, Meta Muse, Google's agent features in Chrome.

The good news: France has a strong AI ecosystem. Here's what exists, without hype.

Assistant or agent: two different needs

  • An assistant (like ChatGPT or Le Chat) answers, writes and summarises. You stay in control.
  • An agent acts: it uses a computer, a browser and your accounts to finish a task, even while you're away. See what is an AI agent.

There are European options in both categories.

Mistral AI: Europe's model champion

Mistral AI is Europe's leading maker of language models. Some 2026 landmarks:

  • Le Chat became Vibe on 28 May 2026. Vibe has three modes:

    • Work, for autonomous multi-step tasks across Google Workspace, Outlook, SharePoint, Slack or GitHub, with consent before it starts;
    • Code;
    • Chat, the former Le Chat.

    chat.mistral.ai still works.

  • Frontier and open models. Mistral Large 4 was previewed on 6 October 2026. Mistral Small 4 and other models are open-weight (Apache 2.0).

  • Compute in France. Its first data centre is at Bruyères-le-Châtel, south of Paris, financed with $830 million of debt. The target is one gigawatt by 2030.

  • Financial heft. A €3 billion round in September 2026, led by Samsung, valued it at over €21 billion.

  • Data. Hosted in the EU by default. On the free tier, chats may be used for training unless you opt out. That is not the default on Team and Enterprise plans.

The French State chose Mistral too: "Assistant IA", the tool rolled out to civil servants in 2026, runs on Mistral models hosted by Outscale.

Other French and European players

  • Dust (Paris): a platform for company agents connected to Slack, Notion and internal tools. It claims more than 3,000 customer organisations.
  • H Company (Paris): computer-use agents (Surfer H for the browser, Runner H for orchestration) and its partly open Holo3 computer-use models.
  • Pleias (Paris): small open models trained on rights-cleared data.
  • LightOn: a sovereign generative AI platform for businesses (Paradigm).
  • Kyutai: a nonprofit lab behind the open voice models Moshi and Unmute.
  • Aleph Alpha (Germany): merging with Canada's Cohere, as announced in September 2026.

Baguette Bot: AI agents built in France, hosted in Paris

Baguette Bot is an AI agent platform for individuals, freelancers and small teams.

  • Its own computer. Each account gets its own Linux computer in the cloud, hosted in Paris. Your bots browse, code, file documents and run routines there, even while you sleep.
  • Your choice of model. You pick the model for each bot among more than 400. With sovereign mode, every bot uses Mistral AI models, served by Mistral with no retention, and services hosted outside Europe are switched off.
  • Everywhere. The interface is in French and English. There are apps for Mac, Linux, Android and iPhone (beta), and you can also reach your bots by Telegram, WhatsApp or email.
  • Yours to take. Bots export to an open .bot file.

Is Mistral as good as ChatGPT?

For most everyday tasks, Mistral models are more than enough: writing, summarising, sorting, extracting, translating. On the longest and most complex tasks, the best US models sometimes still lead. The right approach is to test on your own tasks. On Baguette Bot, you can give Mistral to your sensitive bots and another model to the rest.
